White Chili

Ingredients
2 cans white beans (Cannelloni), drained
2 Tbsp. olive oil
1 large onion, chopped
3 cloves garlic
10-20 small hot peppers
1 Tbsp. ground cumin
1 Tbsp. dried oregano
1 tsp. ground cinnamon
cayenne pepper to taste
4-6 c. chicken broth
1 lb. ground white turkey meat
3/4 lb. shredded Monterey Jack or cheddar cheese
salsa for garnishing
minced fresh cilantro for garnishing
salsa for garnishing
sour cream for garnishing

Directions
Heat oil over medium heat in a large pot and saute the onion and gournd turkey until cooked through. Stir in garlic, peppers and spices and saute for 3-4 minutes until flavors are blended. Adjust seasonings as needed. Add beans and 4 cups of broth. Bring to a boil and simmer for 20 minutes. Continue to add broth as needed.

Just before serving, stir in shredded cheese and cook until melted, 1-3 minutes. Serve with remaining cheese, salsa, sour cream and cilantro.
