Ingredients1 Tbsp. olive oil
3 green onions, sliced
1/2 Tbsp. fresh oregano (1/2 tsp. dried)
salt and freshly ground black pepper to taste
3 Tbsp. balsamic vinegar
1 pkg. (10 oz) (8 c) fresh spinach, rinsed and torn into bite size pieces
1 c. grape tomatoes
1 c. chick peas, drained
Parmesan cheese
Directions
Mix all ingredient together. Adjust seasonings to taste. Serve chilled or at room temperature.
