Spicy Shrimp Fritters

Ingredients
5 tsp. olive oil, divided
1 lb. shelled and deveined shrimp, raw
2 cloves garlic, chopped fine
1/2 jalapeno chile, minced with seeds
salt and pepper
2 large eggs, lightly beaten with 2 Tbsp. water
1/4 c. flour
1/4 tsp. baking powder
pepper jelly and fruit salsa for dipping
limes

Directions
Toss shrimp with garlic, jalapeno, and 1/2 tsp. salt in a large bowl.

Heat 1 tsp. oil in large skillet over high heat. Add shrimp to skillet and stir fry until partially cooked, 1-2 minutes. Cool and chop.

Whisk eggs together; stir in cooled shrimp and any drippings from skillet.

Combine flour, 1/4 tsp. salt and pepper. Mix half of mixture with chopped shrimp and then add remaining and mix well.

Add 1 tsp. oil to skillet and heat over medium high heat. Drop shrimp mixture by tablespoon into hot oil. Cook 1 to 1 1/2 minutes, until golden; turn and repeat. Transfer to paper towel to drain. Repeat with remaining mixture.

Serve hot with dripping jelly or fruit salsa and limes. Makes about 24 fritters.
