Ingredients2 lb. red potatoes, diced
12 oz. smoked sausage
1/2 c. finely diced celery
1/2 medium red onion, diced
1/3 c. Dijon-style mustard
1 Tbsp. fresh lemon juice
salt and pepper to taste
Directions
Cook potatoes for 10 minutes (or microwave 3-5 minutes)until tender. In a nonstick skillet, over medium high heat until hot, add sausage. Saute for 2 minutes. Combine potato and sausage in a large bowl. Add remaining ingredients. Toss well to coat.
