Ingredients12 slices Italian bread, pre-sliced about 1/2 thick
4 tbls. olive oil
8 oz. mozzarella cheese, cut into 1/4 inch slices
4 plum tomatoes, cut into 1/4 inch slices
1/2 c. fresh basil leaves, plus extra for garnish
garlic salt and fresh ground pepper to taste

Directions
Preheat oven to 425 degrees. Trim crusts from bread and cut into 4 equal squares. Arrange on a baking sheet and brush both sides with 1/2 of olive oil. Bake for 3-5 minutes, until the squares are lightly toasted.
Remove from oven and place on board with other ingredients. Make stacks, starting with a square of bread, slice of mozzarella with a slice of tomato and a basil leaf. Sprinkle with garlic salt and pepper and repeat, ending with bread. (3 slices of bread per stack.)
Push skewer through each stack and place on baking sheet. Drizzle with remaining oil, sprinkle with parmesan cheese and bake at 350 degrees for 10-15 minutes, until the cheese begins to melt. Garnish with fresh basil leaves. Serve while warm.
