French Onion Soup

Ingredients
4-5 large onions, sliced thinly
4 Tbsp butter
2 (14 oz.) cans beef broth, low sodium
1 broth can water
salt and pepper, to taste
1 cup croutons or slice of crusty bread
slices of Swiss or Provolone cheese
splash of red wine or vermouth

Directions
In a deep saucepan, sautee onions until tender, NOT browned. Add beef broth, salt, pepper and wine. Simmer covered for 20 minutes, stirring occasionally.

Pour into six oven-proof bowls or mugs, place on baking sheet. Float bread or croutons on top; cover with slice of cheese. Broil for 4 minutes or until cheese bubbles, melts and just browns.
