Chunky Corn-Bread Dressing

Ingredients
7 c. corn-bread stuffing
4 c. white-bread stuffing
3 Tbsp. butter
6 medium leeks, sliced
4 celery ribs, chopped
1 tsp. dried sage, crushed
2 tsp. dried thyme
freshly ground black pepper to taste
8 slices bacon, crisp-cooked, drained and crumbled
3 eggs, beaten
2 1/2-3 c. reduced-salt turkey or chicken broth

Directions
Preheat oven to 325 degrees. Lightly grease a 3-quart baking dish.

Put cubes into a very large mixing bowl. In a large skillet, melt butter over medium heat. Add leaks and celery. Cook about 5 minutes more until tender, stirring often. Stir in sage, thyme and pepper. Add to bread cubes. Stir bacon into cubes.

In a medium mixing bowl, combine eggs and 2 c. broth (more, if necessary); pour over bread mixture, tossing lightly to coat (don't saturate bread).

Pour dressing into prepared dish. Cover with foil. Bake, covered for 20 minutes. Remove foil and bake for 16-20 minutes longer or until top is lightly browned and dressing is heated through.

10-12 servings.
