Zocca's Lemon Crusted Tilapia
Lemon Crusted TilapiaIngredients
8 oz Tilapia Filet
1cup Bread Crumbs
1 ea Lemon, zested
1tsp Fresh Thyme
2 cups Baby Spinach
8 pieces Gnocchi
1 tsp Garlic
1 tbsp Olive Oil
3 oz Heavy Cream
2 oz White Wine
1tbsp Parmesan Cheese, grated
Salt to taste
Pepper to taste
In a mixing bowl, combine the breadcrumbs, lemon zest and chopped thyme. Season the tilapia filet with salt and pepper and crust with the breadcrumb mixture.Bake in a 350 degree oven for 7-9 minutes or until the fish is cooked thoroughly.
Basic Gnocchi Recipe 2 ea Russet Potatoes
2 cups All Purpose Flour
1 ea Egg
Salt pinch
Procedure
Bring a large pot of salted water to a boil. Peel the potatoes and add to the pot.
Cook about 15 minutes until tender. Drain, cool and mash with a fork.
Combine 1 cup of mashed potato, flour and egg in a large bowl. Knead until the dough forms a ball. Roll the dough into long cylinders about ½ inches thick and cut into ½ inch pieces.
Drop dough dumplings into the boiling water and cook 3-5 minutes until the gnocchi have risen to the top drain and serve immediately or cool and save for future use.
Night Heron MartiniHeat a sauté pan and add the olive oil, cook the chopped garlic until caramelized, add gnocchi and fresh spinach, deglaze with the white wine, add the cream, let reduce, season with salt , pepper and parmesan cheese.
