Tropical Fruit Salad with Avocado & Grilled Shrimp


1 pound large shrimp, peeled & deveined
½ recipe dressing, recipe to follow
2 mangoes, peeled, seeded & diced
1 papaya, peeled, seeded & diced
2 avocados, peeled, seeded & sliced or diced
1 head lettuce or Radicchio, leaved separated


Marinate the shrimp with half of the dressing for 30 minutes in the refrigerator.
Season the shrimp with salt & pepper. Grill for 2-3 minutes on each side. Keep warm or chill in the refrigerator.
Combine the diced mangoes, papaya and avocados in a large bowl. Drizzle with some of the dressing. Toss to combine. Season with salt & pepper.
Place the Tropical fruit salad in a lettuce leave. Top with some of the grilled shrimp. Drizzle with more dressing if desired.


Dressing/Marinade:

1 clove garlic
8 tablespoons chopped ginger
¼ cup cilantro, chopped
1 lime, zest & juice
1/3 cup canola oil


Place the ginger in a food processor. Process to chop fine.
Place the chopped ginger in a paper towel or dish towel and squeeze out the juice from the ginger. You should have about 3 tablespoons.
Combine the garlic, ginger juice, cilantro, lime zest and juice in a food processor. Drizzle in the oil.
