1 bell pepper (finely diced)
1 onion (finely diced)
1 tomato (diced)
12oz extra firm tofu
2 tablespoons nutritional yeast
1 teaspoon salt
1 teaspoon pepper
½ teaspoon cumin powder
½ teaspoon chili powder
½ teaspoon garlic powder
2 tablespoons olive oil
6 corn tortillas
1. Put tofu in a clean kitchen towel. Squeeze the liquid out of the tofu.
2. In a hot skillet with 2 tablespoons of oil, sauté the onion, bell pepper and tomato.
3. Slice the corn tortillas in ¼ inch strips and add to the sauté pan. Cook until tortillas are slightly browned.
4. Add tofu and spices and cook for 3 additional minutes.
Serve with fresh pureed black beans, corn tortillas and hash browns.
