1 pint strawberries, hulled and halved
1-2 tbspns sugar
1 C ricotta cheese
4 oz. cream cheese
½ C powdered sugar
½ tspn vanilla
mini chocolate chips for garnish

Strain the ricotta cheese overnight in a colander lined with paper towels.
In a food processor, pulse the strawberries and 1-2 tablespoons of sugar until chopped. Strain. Put the ricotta, cream cheese and powdered sugar in the food processor and pulse until smooth.
Add the ricotta to the strawberries and refrigerate for an hour if possible.
Pipe onto cookies and sandwich together. Garnish the sides of the sandwiches with chocolate chips or toasted coconut or nuts. Freeze until firm.
