1 stick of butter
2 cups Bisquick or other baking mix
1 cup sugar
1 cup milk
1 16 ounce can of fruit of fruit pie filling
Preheat oven to 350°.
Place stick of butter in a 10” cast iron skillet (only use a cast iron skillet as this is what makes the cobbler special). Put in the oven for the butter to melt. Don’t leave in longer than 5 – 7 minutes or the butter will burn.
While the butter is melting, in a large mixing bowl, mix together with a large spoon the baking mix, sugar and milk. Pour this mixture into the skillet with the melted butter. Do not mix.
Pour the can of fruit in the middle of the batter and gently distribute evenly with a spoon. Do not mix – just distribute.
Place in preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.
Serve hot with vanilla ice cream if desired.
Variation: for cherry and peach flavors add 1 tsp. of almond extract to the batter. For apple, add 1 tsp. of cinnamon to the batter.
