1 pound bag of red potatoes washed and cut into bite sized chunks.
Boil the potatoes. Add in 2 cups chopped celery, one cup chopped red onions, one can chopped black olives, 6 hardboiled eggs, chopped.
In a separate bowl whisk together one cup light mayo and a half of a cup red wine vinegar. Mix in a tablespoon of dried dill, our use fresh chopped dill if you have it. Add in a teaspoon of dried mustard powder, teaspoon of black pepper and a teaspoon of salt. Whisk into a dressing...pour and add into salad. Chill and enjoy.
