SAN ANTONIO-Firefighter week continues and today San Antonio Fire Department is showing us what they got. Fire Engineer James Murray, Sean Wiatrek and firefighter Larry Jansky are making a Pulled Pork BBQ Pizza that actually took 1st place at the FF Q-Off at the Hyatt Regency last year benefiting the Texas Burn Survivors Society.
RECIPE:
PULLED PORK BBQ PIZZA
1 Boston butt pork shoulder
(approx. 8lbs)
Pork Rub
Brown Sugar – 1 cup
Ground Black Pepper – 1 Tbsp
Onion Powder – 2 Tbsp
Cayenne Pepper – 1 Tbsp
Paprika – 2 Tbsp
Salt – 3 Tbsp
White Pepper – 1 Tsp
Ground Cumin – 1 Tsp
Garlic Powder – 1 Tbsp
Coat pork with plenty of mustard and honey. Apply rub evenly to entire pork. Smoke on pit for 3 to 4 hours on med/high heat. Remove from pit. Cut onions and jalapenos and layer on bottom of pan. Place in 13 x 9 pan. Break apart cooked pork and cover with foil. Place in oven covered for 1 1/2 to 2 hours until tender.
Sauce Recipe
Ketchup – 2 ½ cups
Mustard – ½ - ¾ cup
Honey – ½ cup
Chipotle peppers – 2 minced (add adobo sauce)
Medium Onion – ¼ minced
Cloves garlic – 2 minced
Jalapeno – 1 minced
Worcestershire Sauce – 1 ½ Tbsp
Apple cider vinegar – 2 ½ Tbsp
Black pepper – 1 Tsp
Salt – 1 Tsp
Mix ingredients and simmer until delicious.
Pizza Dough (basic dough)
AP Flour 4 ½ cups
Sugar 1tbs
Salt 1 ½ tsp
Yeast 1 tsp yeast
Olive oil ¼ cup
Water warm 1 ¾ cups
Mix, Kneed, let rise and roll
Assembly
Apply small amount of sauce to rolled out pizza dough layer , place thin sliced tomatoes, fresh sliced mozzarella cheese, pulled pork (generous don’t be scared), sliced pickled jalapenos, and chopped red onion.
Cook at 450 until pure deliciousness is achieved.
