SAN ANTONIO - Vegeria Vegan Restaurant offers customers Tex-Mex and American cuisine minus the meat and cheese. These dishes are packed with flavor.
Vegeria is nestled in a cute, little building next to the Taco Garage. Fred Anthony Garza was inspired by his late grandmother, Rosalie Rodriguez Garza.
The food is delicious. The pastries and cupcakes are to die for. We also tried the Vegan Corn Potato and Poblano Flautas and demanded they tell us how to make them.

Here's the recipe:
Vegan Corn Potato and Poblano Flautas
Ingredients:
● 1 Teaspoon Sea Salt
● 2 Teaspoons Black Pepper
● ¾ Cup Onion (chopped)
● 5 Garlic Cloves
● 2 Poblano Peppers (De-seeded, De-ribbed, and Cubed)
● 1.5 Cups Corn
● 3 Cups Cooked Potatoes (Lightly Chopped)
● 3 Tablespoons Olive Oil
● 10 Whole Wheat Tortillas
● 3 Avocados
● Vegan Sour Cream
● Toothpicks
Instructions:
● Heat Olive Oil in pan
● Add Pepper, Onions, Garlic, and Poblanos
● Cook 4 Min
● Add Corn
● Cook 2 more Min
● Add Potatoes and turn off heat.
● Mash Mixture and add Salt
● Spoon into tortillas
● Roll into taquitos, Pierce close with toothpick
● In a seperate Pan fry with just enough enough oil to cover the pan
● Fry both sides until lightly brown
● Top with avocado, vegan sour cream
● Garnish with Red Cabbage.
