Recipe: Roasted Plantains

SAN ANTONIO - Chef Keith Cruzan shares his passion for creating delicious dishes with San Antonio.  Here's a recipe for his Roasted Plantains.

Roasted Plantains

4 each plantains
2 tbls olie oil
1/8 tsp salt

1. Preheat oven to 400°F.
2. Coat a nonstick cookie sheet with cooking spray.
3. Cut the ends off of the plantains and peel.
4. Cut each plantain on the diagonal into 1/2 inch slices.
5. Coat with olive oil arrange in single layer and sprinkle with salt.
6. Bake, turning occasionally, for 10-15 minutes, until plantains are golden brown and very tender.

Servings: 4
Oven Temperature: 400°F
Cooking Times
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Inactive Time: 5 minutes
Total Time: 25 minutes

Tips
When the skin is yellow with spots of black they're ready to cook with.
There are many different ways to flavor these, try a little cinnamon and sugar or try with your favorite chili seasoning.
