Recipe: Redcorn's Short Rib BBQ Tacos

SAN ANTONIO - Tips from the voice of John Redcorn, Jonathan Joss, to "grilling" inside.  Here's a recipe for Redcorn's Short Rib BBQ Tacos from the King of the Grill River City Recipes Collection.

REST IT.
ROAST IT.

Ingredients
2 to 3 lbs. of beef short ribs
Redcorn's King Of The Grill Rub
pack of flour tortillas
Redcorn's bbq sauce


Let the healing begin:

Rub down those short ribs; got to love your "shorty".
Rest your shorty - overnight is best.
Roast them. Wrap the short ribs in a tight double foil pouch and place in a 225 degree oven for about 2 to 3 hours.
Remove pouch from oven, drain liquid and save. You will use this tasty goodness to wow up the sauce.
Reduce liquid and remove some of the fat, add BBQ sauce and allow to come to a boil and reduce again.
Remove ribs, de-bone if you wish, and place in a pan. Add reduced sauce to standing ribs and place foil covered ribs into 325 oven for 45 minutes.
Remove foil and place back into oven to achieve that nice caramel taste and color: about another 20 minutes.
I like to switch to broil for a bit to really build a bit of a crust on the rib meat,
