Yield: Serves 1-2 people

Ingredients…
  • 1 Tbsp Whole Butter
  • 2 ounce Butter Poached Lobster Meat – small diced
  • ¾ cup Heavy Cream
  • 8 ounce Penne Pasta – cooked (slightly al dente)
  • ¼ cup (4 oz) Mac & Cheese Base Sauce (see recipe below)
  • 1 Tbsp Parmesan Cheese
  • 1 Tbsp Oreganata Crumbs
Directions: Cook Penne, leaving slightly al dente. Set aside. Prepare Mac and Cheese base sauce (see blow). Heat a sauté pan over medium heat and add the whole butter. Add the lobster meat and toss. Add the heavy cream and bring to a simmer. Add the cooked penne and toss well. Add the mac and cheese base and continue tossing until sauce is heated and smooth. Place in a casserole dish. Top with parmesan cheese and oreganata crumbs. Place in oven on broil, high, for one minute or until golden brown. Serve immediately

Mac & Cheese Base Sauce
  • 1 quart Whole milk
  • 6 Tbsp Whole butter
  • ½ cup All-purpose flour
  • 8 oz Gouda cheese, grated - @ 2 cups
  • 4 oz White Cheddar, grated - @ 1 cup
  • 1 Tbsp Kosher salt
  • ½ tsp ground black pepper (mill)
  • ½ tsp Coleman’s dry mustard
  • 1 tsp Paprika
  • 2 Tbsp Lea & Perrins Worcestershire Sauce
  • 4 oz parmesan cheese, grated -@ 1 cup
Directions: Heat the milk in a small saucepan (but don't boil it). In a large pot, melt 6 tablespoons of butter and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. Still whisking, add the hot milk and cook for 1-2 minutes until thickened and smooth. Remove from stove and add gouda and cheddar cheese. Mix well to incorporate. Season with kosher salt, black pepper, dry mustard, paprika and Lea & Perrins. Mix well. Add parmesan cheese and mix well.

Check seasoning and consistency. Adjust if necessary.
