Recipe: No-cook pasta sauces

The temperatures are starting to heat up, so why make your kitchen even hotter by turning on the stove? Mary Martini from Central Market has these no-cook pasta sauces the whole family will love.

Pasta with Prosciutto, Peas & Parmigiano-Reggiano

Ingredients...

  • 1 pound pasta, cooked & drained (save some pasta cooking water)
  • ¼ pound Prosciutto, sliced or diced
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 2 tablespoons butter
  • ½ cup cream
  • 1/3 cup parsley, chopped
  • 1 cup peas, cooked
  • 1 cup Parmesan cheese
  • salt & pepper to taste

Combine the prosciutto, olive oil, garlic and butter. Add the cooked, drained pasta and
toss. Add the cream, parsley, peas and parmesan cheese. Season with salt & pepper to
taste. Thin the sauce with the reserved pasta water if necessary.

Serves 4-6

Pasta with Shrimp, Tomatoes, Olives & Feta Cheese

Ingredients...

  • 2 tablespoons olive oil
  • 1 cloves garlic, chopped
  • red pepper flakes, to taste
  • 2 cup can tomatoes or fresh, chopped
  • 2 tablespoons fresh herbs (parsley or basil), chopped
  • 3 tablespoons olives, sliced
  • salt and pepper to taste
  • 1 pound shrimp, cooked
  • ¼ cup feta cheese, crumble
  • 1 pound pasta, cooked and drained

Combine the olive oil, garlic, red pepper flakes, tomatoes, herbs, olives. Season with salt and pepper. Add the cooked pasta and toss. Add the shrimp and feta and combine.

Pasta with Tuna, Sun-Dried Tomatoes & Olives

Ingredients...

  • 2 tablespoons olive oil
  • 1 clove garlic, chopped
  • 2 tomatoes, chopped
  • ¼ cup sun-dried tomatoes, packed in oil, chopped
  • 1 lemon, zest and juice
  • 1 canned tuna packed in olive oil
  • ½ cup Kalamata olives
  • 1 teaspoon capers
  • 2 tablespoons parsley 
  • ½ pound Pasta, cooked reserve ½ cup of Pasta water
  • Salt and Pepper to taste

Combine all ingredients. Toss with the hot pasta. Season with salt & pepper.

Serves 4
