Our dietician Heather King is cooking up ‘feel better’ soup. It’s a recipe to help those out with the flu or cold. It’ll supply some good nutrition that tastes delicious. This chicken soup will have you back on your feet in no time!
Ingredients…
- 2 stalks celery, finely diced
- 1/2 onion, finely diced
- 2 medium carrots, diced
- 2 cups chopped chicken breast
- 1 box fideo (or substitute 3 ounces noodles or 1-1/2 cups cooked rice)
- 8 cups chicken stock or low sodium chicken broth pepper to taste
Sautee chopped vegetables for 2-3 minutes; add diced chicken breast; cook for 4-5 minutes. Add broken fideo pieces and sauté until lightly browned. Pour in chicken stock and bring to a boil. Lower temperature and simmer 10-15 minutes. Add pepper to taste, if desired.
