Recipe: Back-to-school cupcakes

SAN ANTONIO - An extra-special treat for the first day of school! Kate-Frost Feild from Kate's Frosting & Cupcake Cabin showed us how to make prom queen cupcakes and where you can pick up flavors like "The Jock" and "The Bully."

Ingredients for Angel Food Cake

  • 1 3/4 cups sugar
  • 1/4 teaspoon salt 
  • 1 cup all purpose flour
  • 12 egg whites (the closer to room temperature the better)
  • 1/3 cup warm water
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons cream of tartar

Directions

  1. Preheat oven to 325 degrees F.
  2. Sift half of the sugar with the salt and flour, setting the remaining sugar aside.
  3. In a large bowl, use a whisk to thoroughly combine egg whites, water, vanilla extract, and cream of tartar. After 2 minutes, switch to a hand mixer. Slowly sift the reserved sugar, beating continuously at medium speed. Once you have achieved medium peaks, sift enough of the flour mixture in to dust the top of the foam. Using a spatula fold in gently. Continue until all of the flour mixture is incorporated.
  4. Scoop  mixture into lined cupcake pans. Bake for 20 minutes before checking for doneness with a toothpick.
  5. Cool, fill with strawberry jam, and frost.

Champagne Frosting

  • 3 1/4 cups powdered sugar
  • 1 cup butter, at room temperature
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons champagne, at room temperature

To Make The Frosting: With an electric mixer, beat together sugar and butter. Mix on low until well blended, and then on medium for another two minutes.  Add vanilla and champagne, beating on medium for another minute.

REALLY?! Come on people they are cupcake names. Too sensitive. There will always be bullies and thats what we will call them. And its up to parents to control what their kids eat, DUH. I know many kids that have a cupcake every now and then and they arent obese. Its called parenting. Kate dont you dare change any of those names. You do what you do. We love your cupcakes. And you will continue to get my business as well as many others just ignore the negativity and we fans will stand up for you :)

I tought they gone feed more healthier foods instead of cupcakes to the already so many obese kids ....

I was just noticing the names of two of her cupcakes. "The jock" and "the bully". In this time and age, with so much bullying going on in the schools, why would she give these cupcakes these names?
