Dough:
- 2 1/2 cups all purpose flour
- 1 Tbs. granulated sugar
- 1/2 Tsp table salt
- 1/4 lb. or 1/2 cup cold unsalted butter, cut into 1/2 inch pieces
- 1/4 cup cold vegetable shortening, cut into 1/2 inch pieces
- 2 Tsp. fresh lemon juice
- 1/4 cup plus 2 Tbs. Very cold water
Place flour, sugar, and salt in a food processor fitted with the steel blade; pulse briefly to combine. Add the butter and shortening; pulse until a crumb forms, about 30 seconds. Add the lemon juice and water, pulse just until moist crumbs form.place dough on work surface form into 2 4-5 inch discs. refrigerate at least one hour or up to a day.
Filling:
- 6 cups of thinly sliced, peeled apples Granny Smith or golden
- Delicious Apples
- 3/4 Cups Sugar
- 2 Tbsp All Purpose Flour
- 3/4 Tsp Ground Cinnamon
- 1/4 tsp. Salt
- 1/8 Tsp Ground Nutmeg
- 1 Tbsp. Lemon Juice
Heat oven to 425 degrees. Place one pie crust in an ungreased 9-inch glass pie dish. press dough against sides and bottom. In a large bowl mix together the filling, and place in the pie dish, top with the second pie dough stuffing the excess in the apple mixture. Cut slits in several places on top crust.
Bake about 40-45 min or until apples are tender and crust is golden brown. Cover edge with foil for 15-20 minute to prevent browning on the edges. Cool before serving.
