SAN ANTONIO - The Pellegrino Almost Famous Chef Competition made a stop in SA Monday night. This one of a kind competition brings student competitors from across the U.S. and Canada to compete head-to-head in ten regional competitions for the chance to participate in the final competition, held in Napa, California. Regional winners will go on to compete against nine other competitors in a variety of competitions including: the Mystery Basket Competition, the Signature Dish Competition, the People's Choice Award, and the Acqua Panna Fan Favorite.

Here's regional winner's recipe base for Orange Miso sauce…

Orange-Miso Glaze

  • 1 ea bottle of blood orange vinegar
  • 1 ea orange
  • 2 tbsp agave
  • 2 tbsp EVOO
  • ¼ tsp xatham gum
  • 3 tbsp miso paste
Reduce vinegar by half.

Remove 4 large section of orange peel. Remove the pith. Char the peal until black. Add to vinegar with juice of the grilled orange. Add all remaining ingredients and puree until smooth.

Strain and reserve for service.
