Ingredients:
- 2 small baking potatoes
- 1 small sweet onion
- 1/2 red bell pepper
- 2 tablespoons butter
- 8 eggs
- 1/2 cup skim milk
- Salt and pepper, to taste
- 1 cup ham, diced
- 1 cup Colby Jack cheese, shredded
- 2 green onions, sliced thin
- 4 Roma tomatoes, diced
Directions:
1. Chop the potatoes, sweet onion, and bell pepper into small pieces and place them into the bottom of a microwave safe dish.
2. Slice the butter into pieces and sprinkle on top of the vegetables.
3. Cover and microwave on high for 5 minutes, or until the potato is tender.
4. Meanwhile, whisk eggs, milk, and salt/pepper in a bowl then take the dish out of microwave.
5. Sprinkle half of the cheese over the potatoes.
6. Pour the egg mixture over the cheese and potatoes and then top with the remaining cheese and ham.
7. Microwave on high for 13 minutes.
8. Sprinkle green onion and tomato on top.
