MIXED BERRY CREPESBatter Ingredients:
1 cup All Purpose Flour
½ cup Whole Milk
½ cup Water
3 ea Eggs
2 TB Unsalted Butter (Melted)
½ tsp Salt
¼ cup Sugar
Mixed Berry Crepes Topping and Filling:
16 oz Cream Cheese
1 tsp Lemon Zest
2 TB Lemon Juice
1 cup sugar
Pinch Salt
3 cups Strawberries, Quartered
3 cups Blueberries
1 cup Sugar
6 sprigs mint
Directions:
Crepe Batter:
1. In a blender, blend the flour, water, milk, eggs, salt, sugar and butter for 20 – 30 seconds. Cover crepe batter and refrigerate overnight for best results. Minimum chill time is 1 hour.
2. Heat a crepe pan or a nonstick pan over medium high heat. Brush lightly with butter or use a nonstick spray.
3. Cook crepe approximately one minute and then flip over and finish for an additional 20 seconds.
4. Remove from plate and stack crepes as you finish them to keep them moist.
.Crepe Filling and Topping:
1. Slice Strawberries and combine with blueberries and sugar to let them “juice” for 30 minutes.
2. In mixer cream, cream cheese, sugar, lemon zest, lemon juice and salt.
3. Place ¼ cup in each crepe and fold.
4. Top crepes with mixed berries and garnish with sprig of mint.
SPARKLING PASSION FRUIT
Makes 1 Drink
1 pump Passion Fruit Syrup
2 oz Pink Lemonade
7 oz Sprite
1 Lime Wedge
Fill beverage glass full with ice and add
one pump of passion fruit syrup. Add
lemonade and sprite. Garnish with lime.

SPARKLING PASSION FRUIT MIMOSA
Makes 1 Drink
1 pump Passion Fruit Syrup
1 oz Pink Lemonade
6 oz Freixenet Champagne
1 Lime Wedge
Add one pump of passion fruit syrup to
a champagne glass. Add lemonade and
champagne. Garnish with lime.
