2 Tablespoon Shallot Brunoise
½ + ¼ teaspoon Dijon Mustard
¼ teaspoon Salt
½ + ¼ teaspoon Sugar
¼ cup sherry vin
¼ teaspoon Pepper
2 Tablespoon Extra Virgin Olive Oil
Place all ingredients but oil in bowl
Whisk to incorporate
Drizzle in oil to emulsify
Check seasoning
