DALLAS (NBC) - We all know healthy food can help you lose weight, but studies now show the proper diet can also help fight cancer as well as many other diseases.

One woman is convinced that her low fat vegan diet saved her life. At 27-years-old, Katherine Lawrence was an Iraq war veteran. But it was on the home front that she faced her toughest battle ever.

"I started to have really bad pain in my abdomen and I found out I had severe endometriosis and uterine cysts and ovarian cysts," she remembered. "My doctor wanted to put me into early menopause and then schedule me for a hysterectomy."

Desperate to avoid that, Lawrence started eating a low-fat vegan diet. In just five short weeks, her health problems were all but gone.

"My doctor was amazed,” said Lawrence.

Now, as part of the non-profit group called The Cancer Project she teaches cooking classes especially designed to help prevent and battle cancer. In the class, students are armed with the information they need to make better decisions at the grocery store.

With recipes like spicy veggie wraps or guiltless chocolate mousse, you may never even suspect it's good for you.

Researchers say early studies show low-fat diets can help prevent certain types of cancers, and it especially helps prevent the recurrence of breast cancer.
