2/3 cup olive oil or vegetable oil
1 teaspoon honey
1 teaspoon vanilla
1 lime, juiced
Salt & pepper to taste
1 small jicama, julienned
2 oranges, peeled & segmented
2 avocados, peeled, seeded & sliced
4 radishes, trimmed & sliced
1 bunch watercress
Place the olive oil, honey, vanilla and lime juice in a small bowl. Season with salt & pepper and whisk to combine. Add the jicama to absorb some of the dressing.
Place the watercress on the bottom of 4 serving plates.
Arrange the jicama, oranges, avocados and radishes op top. Drizzle with some of the dressing.
