Frozen Fruit Bites
12 vanilla wafer cookies
1/2 cup vanilla yogurt
1/2 cup light cream cheese, softened
1 teaspoon lemon juice
1 teaspoon honey
Fruit (sliced strawberries or kiwi, blueberries, raspberries) Cupcake liners
Place cupcake liners in muffin pan. Put wafer cookie in, flat side up.
Whisk together yogurt, cream cheese, lemon, and honey until smooth. Spoon a heaping tablespoon on top of each cookie. Top with fruit.
Cover with plastic wrap. Place in the freezer for 1 to 1-1/2 hours to firm. Remove from freezer about 15 minutes before eating.
Ice Cream in a Bag
3/4 cup milk or half & half
1 tablespoon sugar
1/4 teaspoon vanilla
Rock salt (about 1/2 cup)
Resealable bag (one sandwich size, 1 gallon size) Favorite toppings
Combine milk, sugar, and vanilla in the small resealable bag. Seal bag and place in the large bag. Add ice and rock salt. Seal large bag and shake for 5-10 minutes until ice cream is frozen. Pull small bag out, add favorite topping, and enjoy right out of the bag.
1 carton strawberries
1 package white chocolate bark
Blue sugar sprinkles
Wash & pat dry strawberries. Melt chocolate according to package directions (for a smaller batch, use half of package.) Sprinkle some blue sprinkles in a small dish. Dip strWberries into white chocolate (make sure some of the strawberry's red still shows), roll tip in blue sprinkles. Place on surface for chocolate to harden. Enjoy!
