Grilled Chicken with Delicious Guava glaze
1/3 cup fresh lime juice
1/4 cup olive oil
1/4 tsp. chipotle chili powder
1/4 tsp. salt and pepper or to taste
2 tsp. or approx. 4 garlic cloves, minced
8 boneless chicken breasts. butterflied
Glaze
1/4 cup guava jelly
1/4 cup apple juice
1/4 cup fresh lemon juice
1/4 cup brown sugar
Combine lime juice, olive oil, chipotle chili powder, salt, pepper and garlic in a bowl. Take chicken breasts and butterfly them so that they are not too thick and can cook evenly. Place chicken breasts in a resealable plastic bag and pour marinade over chicken. Make sure that all of the chicken is covered with the marinade. Refrigerate a couple of hours.
Remove chicken from bag and discard marinade. Grill chicken indoors or on a gas grill over high heat for 5 to 6 minutes depending on the thickness of the chicken.
Make the glaze by combining all ingredients, guava jelly, apple juice, lemon juice and brown sugar in a small saucepan bringing to a boil. Reduce heat to low and simmer, stirring frequently until the sauce begins to thicken up, about ten minutes. Remove from heat.
Brush the chicken on both sized with the glaze during the last few minutes of cooking, turning often so as not to burn.
Serve over a bed of white rice.
