4-6 cups baby kale or other greens
2 pink grapefruits, peeled & segmented
4 slices red onions, (1/3 of a red onion)
3 tablespoons pomegranate seeds
¼ cup Feta, Ricotta salata or other cheese, crumbled
1 lemon or grapefruit, juiced (about 3 tablespoons)
1 teaspoon Dijon mustard
¼ cup olive oil
Salt & pepper to taste
In a serving bowl, combine the kale, grapefruit, red onion and pomegranate seeds.
Place the lemon or grapefruit juice in a small bowl.
Add the Dijon mustard. Drizzle in the olive oil. Season with salt & pepper.
Drizzle the dressing over the salad ingredients. Garnish with the cheese.
