14 oz. green beans
5 slices bacon
1 tbspn. olive oil (optional)
1 tspn. chopped garlic
1/2 onion, slivered
3 tomatoes, halved and grated on the large holes of the box grater
Salt and pepper

Directions:
Cut ends from the beans and then cut into two inch pieces; cook in boiling water until crisp and tender (about ten minutes).
Prepare bacon as directed on package. When bacon is cooked, set aside. In the same pan with the bacon drippings, over medium heat, cook the onion until translucent and then add the garlic and cook for about 30 seconds. Or, if you do not want to use the bacon drippings, use the olive oil in skillet over medium heat. Add the onion and cook until translucent and then add the garlic and cook for 30 seconds. Add the beans and cook with the onion and garlic for another two minutes. Add the grated tomatoes to the skillet and cook until heated through for about three minutes.
