6 cans Pink Beans
6 slices bacon - chopped
1/2 onion - sliced
3 garlic cloves - sliced
Eckrich Smoked Sausage - sliced
1 whole jalapeno
1 jar Sofrito Tomato based mixture
6 slices of salt pork - cubed
dash of Cayenne pepper
3 pkts. sazon con azafran
3 T Pinto Bean Seasoning
1 bottle Beer
In a saute pan combine bacon, onion and garlic. Saute until all ingredients have rendered down.
While bacon and onion mixture is cooking, add the beans, jalapeno, pinto bean seasoning, Cayenne pepper and salt pork in a medium stock pot - Cook over low to medium heat.
Once the bacon and onion mixture have rendered down (onions are transparent), add tomato base mixture, sliced Eckrich Smoked Sausage and the packets of sazon con azafran. Simmer for approx. five minutes. Then combine mixture to beans. Add beer and simmer for approximately 1 hour.
Garnish with cilantro and serve
