1 pound carrots, sliced or whole baby
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 tablespoon honey or brown sugar
Place the carrots on a sheet pan. Toss with the olive oil. Season with salt & pepper. Roast in a 400 degree oven for about 8 minutes, shaking the pan halfway through the cooking time. Remove from the oven, drizzle with the vinegar and honey. Return to the oven and cook for another 5 minutes, or until caramelized.
