Recipe: Tomatoes with Goat Cheese

Mary Martini from the Central Market Cooking School has this simple, but elegant recipe that adds color to any table.

Ingredients:

  • 4 tomatoes
  • 1 large shallot, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme leaves, minced
  • sea salt & pepper
  • 4 ounces herbed goat cheese, cut into rounds

Core the tomatoes, but not too deeply. Cut the tomatoes in half. Make sure the tomato sits flat in a baking pan. Scatter shallots on top of the tomatoes. Drizzle with olive oil, thyme and salt & pepper. Bake in a 425-degree oven for 15-20 minutes, or until just tender, but not falling apart. Serve at room temperature topped with a goat cheese round and a thyme sprig.
