Mary Martini from the Central Market Cooking School has this simple, but elegant recipe that adds color to any table.
Ingredients:
- 16 slices French style bread, sliced thick & toasted or grilled
- 2-3 tomatoes, diced
- 1 tablespoon basil, chopped or julienne
Place the diced tomatoes in a bowl. Season with salt & pepper. Toss and let sit for 30 minutes. Drain the tomatoes and drizzle with olive oil. Top the grilled bread with a slice of mozzarella cheese. Top with diced tomatoes and basil.
