SAN ANTONIO -- What kind of food do you think the San Antonio Food Bank runs out of the fastest? It's peanut butter!
The Food Bank goes through thousands of pounds of peanut butter every week, and that's why News 4 WOAI is trying to help them collect a million pounds of it in one month.
Many San Antonio families are struggling, and that means the food bank is too.
"Demand on the food bank has really gone up and we're struggling to meet the needs," said Eric Cooper, Executive Director of the San Antonio Food Bank.
Cooper said when it comes to keeping one particular food stocked on the shelves, peanut butter is the most difficult. The Food Bank gives out 30,000 pounds of it every week.
Peanut butter is a relatively healthy food for kids because of the protein in it. Coopers says it is also a quick and easy meal for parents or caregivers to prepare for kids or for kids to prepare for themselves or younger siblings.
