We eliminated the use of any oil or fat in the preparation of beans. Our chips, as well as any other fried items, are prepared in canola oil, which in free of cholesterol and low in saturated fats. Our tortillas are homemade and prepared fresh hourly, without the use of any animal products. It takes a little longer and requires more personal attention, but we believe it is worth it.
